I don't know, since I'm not in the south anymore. I'd sure as hell see em if I got the chance. I think a lot of those bands mostly hung it up by now though.

E: yeah it looks like they're pretty dormant along with Suplecs, Supagroup, Syrup, etc

If you're open to metal there's an entire genre (symphonic metal) that frequently has that sort of instrumentation. Even outside of that particular niche, pianos and violins are widely used, and saxophones show up a lot more often than you'd expect.

e: for a specific example, listen to Therion's "Eternal Return". That's pretty heavy on the orchestral elements but not to an unrepresentative degree.

Godspeed You! Black Emperor has a violinist as a core band member. Also they're the best band in the history of music so they've got that going for them. Start with f# a# infinity and just keep going.

the first Kayo Dot album is basically a hybrid of chamber music and rock/metal/prog. long compositions that are very dynamic and have no chorus/refrain. maybe more out there than what you're looking for but i adore this album. toby driver's other band maudlin of the well has some elements of that as well, but it's closer to "just" prog metal.

this might not be quite what you're looking for, but "Blue" Gene Tyranny was a terry riley-influenced composer who made one great rock(ish) album and one amazing live album in the 70s that resulted in two of my favorite songs ever:

Next Time Might Be Your Time from Out of the Blue

and

Without Warning from Trust In Rock

i only wish he put out more music like this than those two albums but he went more classical and avant-garde following these

If you don't mind listening to a weird moon language, Harmaja are (or sadly were, I think) a Finnish band playing some absolutely heart-achingly beautiful, melancholic, (semi)acoustic rock with a pretty prominently featured piano.
